Jon's Tiramisu Recipe


Ingrdients:

2 fl oz Brandy
2 fl oz Marsala
4 fl oz Strong Espresso coffee
1 pkt Sponge Fingers (about 16-20)
2 Eggs (separated)
2 tablespoons Vanilla (or ordinary) Castor Sugar
400 grams Marscapone Cheese

A little plain chocolate (grated)



Method
1. Blend the Brandy and Marsala
and then split the mixture between two bowls. Add the coffee to one of them
2. Arrange half the quantity of sponge fingers in the bottom of your serving bowl (a trifle size bowl is ideal) and sprinkle with half the coffee/alcohol mixture

3. Whisk the egg yolks with the sugar until pale and thick
add the cheese and beat together. Add the Brandy/Marsala mixture (the one without the coffee) and beat again
4. Whisk the egg whites with a pinch of salt until stiff and fold into the mixture

5. Pour half the cheese mixture onto the sponge fingers in the bowl

6. Soak the remaining sponge fingers in the remaining coffee/alcohol mixture and place in the bowl on top of the cheese

7. Spread the remaining cheese mixture over this second layer of sponge fingers

8. Sprinkle top with chocolate. Cover with cling film and refrigerate for 4-8 hours
