Rock Cakes


Makes 12-15 cakes

Preparation time less than 30 mins

Cooking time 10 to 30 mins


Ingredients
225g/8oz plain flour
2 tsp baking powder
1 tsp cinnamon
175g/6oz porridge oats
110g/4oz demerara sugar
110g/4oz butter
1 egg beaten
2 tbsp milk

Method
1. Preheat the oven to 200C/400F/Gas 6.
2. Sift the flour into a bowl and add the baking powder
cinnamon, porridge oats and sugar. Stir thoroughly. 3. Rub in the butter until the mixture looks like breadcrumbs.
4. Pour in the egg and stir until the mixture sticks together (use the milk if needed).
5. Shape the mixture into rough heaps and place on a baking tray. Cook for 15-20 minutes or until golden brown.
